The City Never Looked So Bright

I'm rounding out this week with a nice white wine I picked up on the way home after some retail therapy!



Had a nice dinner out in St. Pete with my friend Jess at RED MESA.  Deeeeeeelish!

How have you spent this week? Are you ready for a hectic Monday?  As an accountant, my busiest days are Mondays and the end of the month.  Thankfully tomorrow is only one of those ;)  

I am starting my P90x3 journey tomorrow (lord help me!)  I know how tough P90x was and I cannot wait to see how the 30 minute version is going to kick my ass.  So excited!

Spartan Race


TAMPA! It's time for the Spartan Race!  So many New Years Resolutions are swirling around, get healthier, stop being a couch potato, be more active, lose weight, be stronger, get out more, meet new people, etc. You have plenty of time to get ready for this race.  Make good on those resolutions, or continue on a healthy, fun, active lifestyle!

"Reebok Spartan Race presents the Special Ops Spartan Race Tampa Sprint at the Raymond James Stadium on Saturday February 15th with charity proceeds benefiting the USSOCOM Care Coalition. This Special Ops Spartan Sprint will be a mix of mud and gnarly outdoor obstacles combined with the challenge of the signature Spartan stadium obstacles all with maneuvers and strategy created by Special Ops Forces. Each finisher will receive a unique Special Ops Spartan Sprint Medal with bragging rights of accomplishing the most unique Spartan event."

Clean up, Clean up, CLEAN UP and Saturday Spa

Drinking my water today (always drink at least 55% of your weight, in ounces, of water per day), doing a facial, and a deep conditioning hair treatment for myself! 

Don't judge the look on my face, it feels like it's frozen with this face mask.  I'm hoping for it to work some serious miracles!

Last but not least, Frank the Tank!  My trusty water bottle.  I broke mine last year and got this one (the 56 oz) AND a 64 oz version for Christmas, thanks to my awesome husband!

Later on I need to get down the Christmas decorations!  Oh, and I need to get those large items out for trash pickup this week.  I love cleaning out stuff I don't use and donating it or trashing it if need be.  There are so many great places for donation (shameless plug for the company I work for) including Sunshine Thrift Stores, Metropolitan Ministries, St. Joseph's Children's Hospital Foundation, and National Kidney Foundation of Florida, to name my favorites.  I'm sure people know the many controversies with Goodwill and Red Cross and where the items donated go with those companies, but I can assure you donations within the 3 organizations I listed do directly give money to help those in need.  I write the checks to those charities.  I'm 100% sure they get the money they are entitled to.  DONATE NOW!  This is the perfect time to do it.  There are people very much in need, and charities that can help you with any information.

I've worked with so many great people over the past year from these charities, I am always thinking of ways to help.  Reach out, volunteer, no matter how little your contribution may seem, it truly is not, it means the world to someone in need.

Bring it on 2014, I'm ready with a clean house and a clear mind.

Chocolate Chip Cookies



Let's call these "half clean" chocolate chip cookies :)




Heat oven to 325 degrees.




Combine dry ingredients in small bowl.


Dry ingredients:

1/2 c. garbanzo bean flour

1/2 c. coconut flour

1/4 tsp. salt

1/2 tsp. baking soda





Combine wet ingredients in big bowl.


1/2 c. brown sugar

3/8 c. organic butter

1 T. vanilla extract (I make my own from THIS recipe with Mexican Vanilla Beans)

1/4 c. Sugar in the Raw




Wisk together.




Take wet ingredients and add:

1 organic egg yolk

1 organic whole egg




Mix thoroughly wet ingredients, then fold in dry ingredients.




Fold in:

1/3 c. organic walnuts

6 squares milk chocolate (chopped)

4 squares dark chocolate (chopped)






Weigh out 1.2 ounces of dough and space out a couple inches on a cookie sheet lined with a Silpat.
















Bake at 325 degrees for 8-10 minutes until set and lightly browned. Let the cookies set up and cook for a couple minutes before biting in!











I LOVE these. My husband however, is kind of meh on them. He likes the more traditional flatter cookies, with white flour, white sugar, and milk chocolate chips. These are not as sweet, they hold their shape well, and they're better for you!

Spaghetti "Bolognese"



I've been playing around with some clean eating recipes as of late, having serious yummy luck with Clean Eating Thai Chicken Larb (buy the app, it's totally worth it!)




If you search for Spaghetti Bolognese, you'll see the definition for a Bolognese sauce come up as:




Bolognese sauce, known in Italian as ragù alla bolognese, is a meat-based sauce originating from Bologna, Italy. In Italian cuisine, it is customarily used to dress "tagliatelle al ragù" and to prepare "lasagne alla bolognese"


BUT I wanted to have a meatless meal this evening, hence the "Bolognese" and here's what I came up with!






Tempeh Spaghetti "Bolognese"

Serves 4




1 pkg Lightlife Soy Tempeh

1 T. safflower oil




Use a food processor to chop up the tempeh in very small pieces. Heat up the oil in a skillet (I like cast iron) and saute the tempeh until slightly browned.




1 organic carrot (medium)

1 organic green bell pepper (medium)

1 organic yellow onion (small)

1 T. safflower oil




Dice carrot, bell pepper, and onion while heating up the oil in a skillet the same as you did with the tempeh and saute the carrot, bell pepper, and onion. Cook until tender but not completely soft, you want there to still be a bit of texture to it.




1 handful basil leaves, chopped

14 oz. Muir Glen Organic Fire Roasted Crushed Tomatoes

15 oz. Muir Glen Organic Tomato Sauce

1 T. Herbes de Provence (organic is preferred, Simply Organic is a great brand)

2 cloves organic garlic, chopped




Combine all ingredients (tempeh, veggie blend, and tomato/herb/spice blend), cook until garlic is fragrant and sauce is warmed through. Season with fresh cracked black pepper and Himalayan salt to taste.




I serve mine over DeBoles Jerusalem Artichoke Flour Angel Hair Noodles with a side of steamed organic green beans!
